Ingredients
What you need
- 0130g soy isolate powder
- 02150g rolled oats
- 033 tbsp black chia seeds
- 043 tbsp pumpkin seeds, toasted
- 053 tbsp sunflower seeds, toasted
- 0630g split cashews, toasted and roughly chopped
- 073 tbsp honey or maple syrup
- 082 tbsp cashew butter or peanut butter
- 092 tbsp coconut oil, melted
- 101 tsp vanilla extract
- 111 tsp cinnamon
- 121 pinch of salt
- 133–4 tbsp plant-based milk to bind
- 14Optional: 30g dark chocolate chips or cacao nibs for extra indulgence
Instructions
How to make it

Toast pumpkin seeds and sunflower seeds together in a dry pan over medium heat for 3–4 minutes until golden and fragrant. Set aside to cool completely.

Toast cashews in the same pan for 3–4 minutes until golden. Set aside to cool then chop roughly.

In a large bowl combine rolled oats, chia seeds, cinnamon and salt. Mix well.

Add toasted pumpkin seeds, sunflower seeds and cashews to the dry mixture and stir to distribute evenly.

In a small bowl whisk together soy isolate powder and 3 tbsp plant-based milk until the protein powder is completely dissolved and smooth — dissolving it separately first prevents dry protein powder pockets forming inside the finished bars.

In a small saucepan warm honey, cashew butter and melted coconut oil over low heat, stirring until fully combined and liquid.

Remove from heat and stir the dissolved soy isolate mixture into the warm honey and cashew butter mixture. Add vanilla extract and mix well.

Pour the complete wet mixture over the dry ingredients and mix thoroughly until every oat and seed is evenly and generously coated.

If the mixture feels too dry to press together, add remaining plant-based milk one tablespoon at a time until it holds together firmly when pressed between your fingers.

Fold in dark chocolate chips or cacao nibs if using, distributing evenly throughout the mixture.

Line a rectangular container or baking tray with parchment paper and press the mixture firmly and evenly inside using the back of a spoon or your hands. Press as hard as possible — the more compact the mixture the better the bars hold together and the cleaner they slice.

Refrigerate for at least 4 hours or overnight until completely firm and set.

Remove from container and cut into 8 equal bars using a sharp knife warmed under hot water for the cleanest cuts.

Wrap each bar individually in parchment paper and store in the fridge for up to 12 days or freeze individually for up to 2 months.
