Oat & Cashew Cookie Bites

No baking, no oven, no fuss. These little cookie bites come together in 10 minutes and are the perfect guilt-free snack to keep in the fridge. Naturally sweet, chewy in the middle, slightly crunchy on the outside — and actually good for you.

Ingredients

What you need

  • 01120g rolled oats
  • 0240g split cashews, roughly chopped
  • 031 tbsp black chia seeds
  • 041 tbsp sunflower seeds
  • 053 tbsp peanut butter or almond butter
  • 062 tbsp honey or maple syrup
  • 071 tsp vanilla extract
  • 081 pinch of salt
  • 091 pinch of cinnamon
  • 102–3 tbsp water as needed to bind

How to make it

    Add oats, cashews, chia seeds, sunflower seeds, salt and cinnamon into a large bowl and mix together.

    Add peanut butter, honey and vanilla extract and mix well with a spoon or your hands until the mixture starts to come together.

    Add water one tablespoon at a time until the mixture is moist enough to be shaped without crumbling — it should hold together when pressed but not be sticky.

    Roll into small balls roughly the size of a golf ball, pressing firmly as you shape each one.

    Place on a lined tray or plate and refrigerate for at least 1 hour until firm.

    Store in an airtight container in the fridge for up to 10 days.

    Makes approximately 10–12 bites depending on size.
