Ingredients

What you need

  • 013 tbsp black chia seeds
  • 02150g rolled oats
  • 033 tbsp sunflower seeds, toasted
  • 042 tbsp pumpkin seeds, toasted
  • 0530g split cashews, roughly chopped and toasted
  • 063 tbsp honey or maple syrup
  • 072 tbsp coconut oil, melted
  • 08Zest of 2 lemons
  • 092 tbsp fresh lemon juice
  • 101 tsp vanilla extract
  • 111 pinch of salt
  • 121 pinch of turmeric (optional, enhances the yellow color naturally)
  • 132–3 tbsp water to bind if needed

How to make it

    Toast sunflower seeds, pumpkin seeds and cashews together in a dry pan over medium heat for 3–4 minutes until golden and fragrant. Set aside to cool completely.

    In a large bowl combine rolled oats, chia seeds, toasted seeds and cashews, lemon zest, salt and turmeric if using. Mix well.

    In a small saucepan warm honey and melted coconut oil over low heat, stirring until fully combined and liquid.

    Remove from heat and add fresh lemon juice and vanilla extract to the warm mixture — adding lemon juice off the heat preserves its bright flavor.

    Pour the wet mixture over the dry ingredients and mix thoroughly until everything is evenly coated and the mixture starts to clump together.

    Add water one tablespoon at a time if the mixture feels too dry to press together without crumbling.

    Line a rectangular container or baking tray with parchment paper and press the mixture firmly and evenly inside. Press very hard using the back of a spoon — the more compact the mixture the better the bars hold together.

    Refrigerate for at least 3 hours or overnight until completely firm.

    Remove from container and cut into 8 equal bars using a sharp knife.

    Wrap individually in parchment paper and store in the fridge for up to 10 days.
